After living in Boston for over a year, I attempted to make chicken soup only once, and to be honest, it wasn’t great! But everything changed when I was highly recommended the Whole Foods pasture-raised fresh whole chicken. After tasting it, I finally understood why it has become a sensation! 🐓

Why This Chicken Soup is a Game-Changer

The soup turned out rich and flavorful! I couldn’t resist savoring it over two days:

  • On the first day, I enjoyed the pure chicken broth with tender chicken.
  • On the second day, I transformed the leftover broth into a delicious chicken noodle soup—absolutely heavenly! Check out the fourth picture!

Simple Ingredients You’ll Need

Creating this delightful dish requires only a few simple ingredients:

  • Whole Foods Pasture-Raised Chicken (whole)
  • Whole Foods Mixed Mushrooms
  • A white radish from the Asian grocery store
  • Organic wood ear mushrooms brought from home

How to Make This Easy Chicken Soup 🍲

  1. Prep the Chicken: High-quality chicken doesn’t require blanching. Place it in a pot with scallions, ginger, and goji berries. Cover with cold water, bring to a boil, and skim off any foam.
  2. Simmer: Reduce heat and simmer for 30 minutes. Then, add the mushrooms and wood ear mushrooms, and continue simmering for about an hour until tender.
  3. Add Radish and Season: Finally, add the white radish and remember to add salt at the end for the best flavor.

The Perfect Finish

At the end of cooking, just a gentle push with chopsticks, and the chicken effortlessly falls off the bone. The broth is naturally rich—neither greasy nor overly salty—making it suitable for even the littlest ones. From now on, this will undoubtedly be my go-to chicken soup recipe! 🍜
